According to this webpage reported by JJ. Andersson, the flag was first hoisted on 30th April 1995. The blue wavy stripes represent the two rivers which cross the town (Cabriel and Júcar). The castle is taken from the arms, described here and represents an ancient (12th or 13th century) palace-fortress which was home to the lords of Cofrentes, who belonged to the Borja (Borgia) family.
Cofrentes lies in eastern Valencia province, has an area of 103.17 sq.km. and is perhaps best known elsewhere in Spain for having a nuclear plant in its municipal territory.
